Wintermelon Dessert by Valerie Ong

Winter melon dessert

2kg winter melon (skinned, cored & cut into small cubes)
3L water
1 bunch of pandan leaves
Rock sugar (to your taste)

1) Put winter melon, water and pandan leaves into a big pot and boil for 30mins.
2) Take out pandan leaves and add in rock sugar. Amount depends on your taste buds.
3) After sugar completely dissolve, plunge in your hand held blender and blend until like purée.
4) Can be eaten either hot or cold. Enjoy!!!!
