Dry Ingredients:
380g plain flour
50g sugar
2 1/4 tsps instant yeast
Wet Ingredients:
2 eggs
140ml milk
1 tsp vanilla essence
60g salted butter (melted)
Cinnamon Fillings:
(Mix together)
150g brown sugar
50g sugar
2 tsps cinnamon powder
Some soft butter
Steps:
Mix the dry ingredients together in a large bowl, or the bowl of a standing mixer (I use kitchenaid speed 1 for 10sec)
Add the wet ingredients and mix until a dough is form. Turn to speed 2 and knead the dough for 5 to 8mins, until smooth and elastic.
Take out the dough and place it in a lightly oiled bowl, cover, and allow to rise until doubled in size for about 1 hour.
Starting on the long side of the dough, roll the side up, pressing as you go, to create a tightly rolled log. Pinch the seam closed and lay the log with seam side down. Cut into 10-12 even pieces, lay them onto a greased/non-stick baking pan, cover and
proof for another 45mins. Preheat oven at 175° and bake for 25mins or until the top turns brown.
