Coffee Bread Loaf by Grace Tan

Recipe for one bread loaf

270g bread flour
30g cake flour
45g caster sugar
½ teaspoon of yeast
1 egg beaten abt 50g
150g ~ 160g milk
12g instant coffee (use better quality one for nice aroma)
30g unsalted butter
Some small bits of almond or flake almond


1) Warm up milk with instant coffee. Let it cool before use.
2) Combine all the buns ingredients except butter for kneading until smooth dough. Add butter and continue the kneading process until smooth and elastic. The dough is ready when it's no longer sticking at the side of the mixing bowl. Let it proof for 40 minutes in a clean bowl cover with cling wrap.
3) Shape the dough and put it into a bread tin. (I used Pullman Bread Tin)
4) Let the dough proof for 40mins.
5) Egg Wash/Water Wash in top of the bread and sprinkle some almond bits or flakes and bake at 170C preheated oven for 30mins.
6) Best to serve it warm with a cup of nice coffee and some Nutella spread.
