Bread Shaping Techniques by Gene Sim

Flower
The photogrid should be read from top to bottom left to right on each row.

1. Roll out a 50g piece of dough to a slightly bigger area than the square piece of ham placed on top.
2. Roll up the dough and ham and pinch to seal and the final result is a "bolster"
3. Cut the roll into 5 pieces
4. Turn the 1st piece as shown.
5. Then 2nd.
6. 3rd
7. 4th
8. The 5th piece should be turned and placed between the 1st and 2nd piece as shown.
9. Tuck the 5th piece in and the whole flower pattern is complete.

Heart
The photogrid should be read from top to bottom left to right on each row.

1. Roll out a 50g piece of dough to a slightly bigger area than the square piece of ham placed on top.
2. Roll up the dough and ham and pinch to seal and the final result is a "bolster"
3. Fold the bolster into half as shown.
4. Make a cut as shown.
5. Turn dough with cut ends away from you.
6. Peel open.
7. Pull open the top parts and you will get the heart shape.
8. Egg wash and put some cheese just before baking
9. Baked product.

Heart #2
 

The photogrid should be read from top to bottom left to right on each row.

1. Roll out a 50g piece of dough as shown.
2-3 Roll up the dough and the final result is a "bolster"
4-5. Cut the roll into half
6. Pull each half apart as shown.
7. Turn one end towards the centre as shown
8. Turn the other half inwards
9. Completed Heart
10. 2nd proof ended, press down the centre of the heart and egg wash
11. Add cheddar cheese
12. Add Ham and onion mayo mixture
13. Baked product.

Stuffed Buns
The photogrid should be read from top to bottom left to right on each row.

1. Roll out a 50g piece of dough to a round shape.
2. Place the filling in the middle 
3. Fold from one end to cover about 1/3 of the circle
4. 2nd fold 
5-7. 3rd fold and seal 
8. Egg wash then do a slit in the middle.
9 Baked product.

Braid

The photogrid should be read from top to bottom left to right on each row.
1. Roll out a 50g piece of dough to slightly bigger than the ham and hotdog coverage.
2. Make cuts on the sides . Take one of the cut pieces and turn it.
3. place the piece turned side down so that the ham will be shown.
4. Do the same turning with the other side
5-6 Do the same for left and right.
7. Baked product with cheese topping.
8. Baked product.

Simple Shaping

The photogrid should be read from top to bottom left to right on each row.
1. Roll out a 50g piece of dough to slightly bigger than the ham
2. Roll up and seal to become a "bolster" and press down on one side as shown.
3. Use a scissors and make 45 deg cut on the dough.
4. Turn each piece in opposite directions
5. Turn the 1st piece upwards
6. Egg wash
7. Baked product

Worm

The photogrid should be read from top to bottom left to right on each row.
1. Roll out a 50g piece of dough to round shape and roll up the ham as shown.
2. place ham as shown
3. Wrap and cover the dough half way
4. Cut strips as shown.
5-6 Wrap the strips over one by one.
7. Egg wash
8. Baked product

1. Roll out a 50g piece of dough to slightly bigger than the ham as shown.
2. Roll to half way
3. Separate the ham and dough. Ham wrap first
4. Put dough across diagonally
5-7 Wrap the strips over one by one ham straight then dough diagonal
8. Egg wash 
9. Baked product

Fan
Fan Shape
The photogrid should be read from top to bottom left to right on each row.
1. Roll a 40g dough into a circle and place a 20 g ball of paste (red bean or anything paste you prefer) in the middle
2. Seal and form a ball
3. press down lightly with your fingers 
4. Roll out into a larger circle 
5. Fold into half 
6. Folder again into a quarter
7-8 Make 2 cuts as shown.
9. Open up as shown

The photogrid should be read from top to bottom left to right on each row.
1. Roll a 40g dough into a circle and place a 20 g ball of paste (red bean or anything paste you prefer) in the middle
2. Press down lightly and roll into a circle
3. Make 4 cuts as shown
4. Make another 4 cuts as shown
5-8 Take one of the cut petals and turn to show the filling and press down lightly
9. Completed shape

Bone
Bone Shape
The photogrid should be read from top to bottom left to right on each row.
1. Roll a 70g dough into a rectangular block
2. Roll it longer
3-4 Using Hands to roll into a long strip as shown
5. Hold the strip and turn the smaller piece around as shown.
6. Tuck the end under
7. End tucked in as shown
8. Do the same for the other end
9. Baked product

Worm II

Another worm Shape
The photogrid should be read from top to bottom left to right on each row.
1. Roll a 50g dough into a circle and place a 20g red bean paste ball in the centre
2. Wrap up the red bean paste
3. Flatten using your fingers
4. Roll into an oval 
5. Cut strips on half of the oval 
6-9 Roll from the uncut end to the cut end
10-12 seal the edges by pressing them down 
13 Bend the completed dough into a crescent shape 
14 Baked product
