Bacon, Egg & Cheese Toastie Cups by Michelle Heng

Bacon, Egg & Cheese Toastie Cups


Ingredients
3 pcs bread
5 pcs bacon
4 eggs (2 beaten)
1 pc cheddar cheese (diced)
2 tbsp melted butter
Salt & pepper

Method
1. Panfry bacon without oil till about 60% cooked, drained on kitchen towel. Set aside.
2. Grease muffin pan with butter.
3. Place a small soup bowl (almost as big as the bread) on bread and cut along and around the edge/rim. This serves as a guide to cut a round piece of bread. You may use a big cookie cutter too. Repeat for another piece.
4. Place a drinking glass on another bread and cut 2 pieces of bread.
5. Flatten the bread with your palm.
6. Cut the 2 bigger pieces into halves.
7. Put and press 2 halves into a muffin pan forming a cup. Repeat for the other 2 halves.
8. Place the 2 smaller pieces, one in each muffin tray to act as base.
9. Grease the bread with butter.
10. Lay bacons around the edge for all the toastie/muffin cups.
11. Place cheese at bottom of each toastie/bacon cup.
12. Crack 1 egg each into 2 muffin cups (1 with bread & bacon, the other just the bacon). Repeat process for the beaten eggs.
13. Sprinkle salt and pepper.
14. Bake items at 190 deg C for 20-25 mins.
15. Garnish as desired and serve hot.

Cups on the right and bottom are made using the bacon as the side wall with a piece of small round bread as base.
Cups on the left and top are made using the 2 halves bread made into cup holding the bacon and egg.
