Tofu Pepes by Imelda Tan

500 gram tofu, mashed
1 stalk spring onion cut finely
5 x bay leaves
Banana leaves for wrapping

Ingredients to blend:
3x garlic
1x small onion
2 x big red chilli
5 x small red chilli (adjust to own taste)
1 teaspoon salt
1 teaspoon sugar

1. Mix tofu with all ingredients except bay leaves and banana leaves till evenly mixed
2. Get steamer ready
3. Wrap a portion of tofu mix in banana leaf, then top with prawns and a bay leave, and secure both ends with toothpicks
4. Do the same for remaining tofu mix.
5. Steam for about 30mins.
