Graham Balls
Recipe:
200 g graham crakers (crushed)
3/4 tin condensed milk
1 packet marshmallows
Crush crackers and mix with condensed milk to form a dough.
Wrap marshmallow in the middle.
Coat with icing sugar and leave to dry for 2 to 3 hrs. (I placed into fridge)
I used the chocolate marie biscuit in place of graham crackers, thus the chocolate looking balls. I thought recipe would be very sweet but surprisingly it's not!

Rustic Apple Pie by Karen Yee
Rustic Apple Pie
Ingredients:
Pie Shell
300 cups flour
2 tbsp sugar
½ tsp salt
½ tsp of baking powder (this really makes the crust extra yummy)
250g cold unsalted butter, cubed
2 egg yolk
2 tbsp ice water
For the Filling
5 green apples - peeled, cored and sliced 1/4 inch thick
40 grams granulated white sugar
55 grams light brown sugar
1 tablespoon lemon juice (tossed into the sliced apples to prevent browning)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
2 tablespoons unsalted butter
1 1/2 tablespoons cornstarch (corn flour)
Directions:
Preheat oven to 220 degree celsius. Place the rack to the lowest of the oven.
For the pie shell, mix all the ingredients together except water.
When the mixture is crumbly, add water. If the dough is too sticky, add a bit more flour
to bind. Add 1 tbsp. at a time. Divide into 2 portions and press into a disc.
Wrap the dough up and chill for 30 mins.
Press one portion of the cold dough into you 8" pie pan and chill it while you prefer the
filling.
For the filling, toss all the ingredients together except butter.
Meantime, roll out the 2nd piece of dough for the top crust.
Arrange the apple slices onto your pie shell you have already prepared in the fridge.
**Do not pour in too much excess liquid left in your bowl as your pie may turn out to be
very soggy.
Gently lay the 2nd piece of dough to cover the entire pie. Trim of excess dougn hanging
over the edges and crim the edges with a fork.
Using a knife, make 2 to 3 slits in the centre of the top crust to allow steam to escape.
Brush the top with an egg wash (mix one egg with 1 tbsp of water)
Place the pie pan onto a baking sheet and bake for about 40 to 45 minutes or till the
apples feel tender when you insert a knife into it.
Remove from the oven and allow it to cool completely before serving.

Braised Pork Belly (Kong Bah Bao) by Vanessa Tay
Braised Pork Belly
Ingredient
500g Pork Belly
4 Ginger - thick slice
6 Cloves Garlic - whole without skin
5 shallot - thick slice
Seasoning
2 tbsp Premium Light Soya Sauce
2 tbsp Dark Soya Sauce with Caramel
3 tbsp Oyster Sauce
2 tbsp Sugar
* I used Brown Sugar
A Dash of Pepper
3 tbsp Cooking Rice Wine
500ml Hot Water
Method
Parboil meat till cook and rinse with water.
Cut pork belly into slices, place pork belly into stew pot with ginger, garlic and shallot. Turn on low flame, add in seasoning as mentioned above.
➰ Add in each condiment at a time .. Give quick stir whenever each condiment added in. Once done, let it boil for 5mins.
🔗 I used this method to bring out the flavor before adding water.
Add in 500ml hot water. Bring to a light boil and let it simmer for 1 1/2 hours.

Beef Croquette by Ronnie Chan
Beef Croquette
Ingredients:
(Yield 15 pieces)
3 large russet potatoes (boiled in water for 45-50mins with skin on)
1 TBsp of salted butter
100ml milk
150g minced Beef
1/2 White Onion finely diced
50g fresh button mushroom finely diced
Salt, Pepper and sugar to taste
Some plain flour for coating.
1 egg beaten + some milk for coating.
Some bread crumb for coating.
Some olive oil + Butter
Oil for deep frying.
Method:
~Check if the potatoes have cooked thru by pricking a fork into it.
~After the potatoes cooked, put in tap water to cool and peel it's skin.
~ Mash the potatoes in a mixing bowl.
~When is almost done, add in 1 Tbsp butter, some salt and pepper continue to mash.
~ Add milk gradually and mash/mix till it is soft and creamy. (check taste, add salt and pepper if require).
Set Aside.
~ In a frying pan, add some olive oil + butter. Add in onion and mushroom cook till fragrant. Add some
salt, pepper and little sugar for seasoning. Add in minced beef, continue to stir fry till beef is cooked.
~ Mix in the beef/onion/mushroom mixture into mashed potato and combine well.
~ prepare 3 plates for flour / egg / bread crumb coating.
~ Using a Tbsp scoop a large portion of potato mixture put into flour.
~ shape/coat the croquette and pat off excess flour.
~ transfer and dip into egg wash.
~ coat with bread crumb, and shape the croquette. Make sure to pat tightly the crumb.
~ Send to deep fry to golden brown.
~ Serve while still warm with tonkatsu sauce and sesame mayo (3 Tbsp mayo 1 Tbsp kewpie sesame
sauce)

1 cup flour
1/2 cup corn flour
3/4 tsp baking powder
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
1 1/2 cups water
2 cups Panko bread crumbs
Method:
1) Wipe mushrooms with clean dish towel, cut off stems and discard.
2) In a bowl, mix together flour, corn flour, baking powder, salt, garlic powder and black pepper.
3) Add water to create a batter.
4) Dip mushrooms into batter, drip off excess and coat in bread crumbs.
5) Deep fry in hot oil till golden brown.
6) Serve with mayo or ranch dressing.

Vegetarian Wu Kok/ Yam Puff by Alicia Gan
Yam Dough Ingredients:
600g Yam
115 wheat starch
1 tsp baking powder
1/2 tsp five spices powder
1 tbsp sugar
1/2 tsp salt
115g Vegetable shortening
1/2 tsp Ammonium Bicarbonate
210 boiling water
Filling:
3 tbsp canned green peas
6 tbsp canned bake beans (may strain the sauce from the bean or leave it as it is but try to reduce it to avoid wet filling)
200g vegetarian layer meat or veg. roasted pork belly (chopped)
3 Chinese mushroom (soaked, chopped)
3 water chestnuts (chopped)
Seasoning:
1 tsp salt
1/2 tsp five spices powder
1 tbsp vegetarian oyster sauce
1/2 tsp pepper
Method:
1) To make yam dough, peel the yam & cut into stripes. Steam until cook and soft, about 40 mins.
2) While waiting for the yam to cook, prepare the filling.
Heat up 2 tbsp oil, stir-fry all filling ingredients until fragrant. Add in seasoning, stir well. Thicken the sauce with a little cornstarch solutions. Stir-fry until slightly dry. Dish up & keep aside.
3) Remove yam from steamer/wok, mash into paste when still hot. Combine wheat starch with boiling water, knead to form a cooked dough. Combine with yam paste. Knead well. Add in the rest of ingredients & knead until form into smooth dough.
4) Divide the dough into 50g each portion. Wrap each dough with enough filling & form into ball shapes. Make sure wok is hot with enough oil to deep-fried yam puff until crispy and golden brown. Dish up and drained. Ready to serve.

Ingredients
a cup of water
2 1/2 tbsp sugar
1/2 tsp baking powder
pinch of salt,
tbsp vegetable oil
1 cup plain flour
coating is cocoa powder (can use cinnamon ) n sugar
Method
cook water,oil,sugar and salt in a pot till they boil
off heat and stir in sifted flour n baking powder(it will form a hot dough)
using big star nozzle n piping bag(recommended non disposable. .its stronger,i burst few of the plastic ones)
pipe into length u like and fry in hot oil till golden brown
coat with cocoa powder n sugar,serve warm
Cold Cucumber Salad by Angelin Goh
Ingredients
3 ~4 japanese cucumber ,scrub clean the skin with some white vinegar ,cubed it with skin on ,seeds parts sliced off.set in strainer to dry
Black vinegar 2 tablespoon
Light Soy sauce 1tablespoon
Sugar 2 tablespoon
Peppercorn or chilli flakes optional 1/2 teaspoon... i added some chilli padis
Sesame oil 1tablespoon
garlic cloves 3-4 minced
Some sesame seeds
Method
Using sesame oil stirfry garlic til fragrance not browned
add in rest of the sauce ingredients,cooked till sugar melted and bubbling appear
Off heat and toss cucumbers in to coat...cool off and sprinkle sesame seeds and store in lidded container in fridge to enjoy

Homemade Healthy Chicken Nuggets by Grace Heng
Ingredients:
For the coating:
1/4 cup Raw Wheatgerm
1/4 cup Brown Flaxseed meal
1/4 cup Oat Bran
1/4 cup almond meal ( I took a couple of almonds and pulsed it through the food processor)
Spices to taste e.g a dash of garlic powder, salt, black pepper, crushed red pepper flakes etc
Nugget Fillings:
Ingredients:
1/2 onion roughly chopped
250gm chicken thigh/ breast
1 cup low sodium chicken broth or water mixed with an egg
1 tablespoon oil ( I used Coconut oil)
Method:
*preheat oven to 200 deg
1. Either slice the chicken thigh into chunks or pulse it through the food processor to make mince
2. Marinate the chicken with a black pepper (optional)
3. Add a tablespoon of oil in to a pan. (optional)
4. Saute onions till translucent
5. Pulse onions through the food processor till fine
6. Mix the onions and chicken meat together
7. Gather the chicken chunk or mince into a ball/ nugget shape
8. Dip it into the broth/egg solution and coat it with the dry mixture
Bake in oven for 10-15min or till golden brown.

CHUCKY'S CHEWY CHOCOLATE CHIP COOKIES
Adapted from Sally's Baking Addiction
Prep: 15 minutes
Bake: 10 - 12 minutesPrep: 15 minutes
Yields: 2 doz average sized cookies
Ingredients
- 170 gr unsalted butter, melted
- ½ cup soft dark brown sugar, loosely packed.
- ½ cup white granulated sugar
- 2¼ cup all-purpose flour
- 1 tsp baking soda
- 1½ tsp cornstarch
- ½ tsp salt
- 1 egg
- 1 egg yolk
- 2 tsp vanilla extract
- 1 cup chocolate chips
- ¾ cup chocolate chips, set aside
Directions
1. Mix flour, baking soda, cornstarch and salt in a bowl. Do not sift the
flour.
2. In another bowl, whisk melted butter, brown and white sugar until sugar
dissolves. Please ensure that the butter is in liquid form at room temperature -
and not simply softened. The darker brown your sugar is, the darker your cookies
will be.
3. Add the egg and egg yolk into the butter mix, and whisk lightly until
creamy. Whisk the vanilla extract in.
4. Pour the wet ingredients into the dry ingredients and mix together with
a wooden spoon or spatula. The dough will be very soft, but eventually will come
away clean off the edges.
5. Add in the 1 cup of chocolate chips, and fold in. They may not stick
well to the dough, but give a good stir until they are just about dispersed
throughout.
6. Preheat your oven to 170 deg C. Meanwhile, just leave the dough in the
fridge to cool slightly.
7. Shape the dough into small balls (I used a cookie scoop) and space out evenly on the baking tray. Make sure to leave space between each ball and from the edge of the tray. Put a few chocolate chips atop each mound.

These 'spread' out quite a bit, so it's best to make them rounded rather
than flat prior to baking
They will be underbaked, but do not bake longer than 12 minutes. Doing so will
result in non-chewy cookies! Allow to 'rest' out of the oven for 15 minutes (do
not transfer to a cooling rack as yet) where they will continue to cook on the
baking tray.
Once they are sufficiently cooled, transfer to a wire rack to cool
completely.

Ham and Gruyere Cheese Muffins (Makes 18)
Adapted from Clockwork Lemon
Ingredients:
2 cups flour
1 tablespoon sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp dried thyme
1 1/4 cup milk
1 egg
1/2 cup melted butter
1 1/2 cups grated Gruyere cheese, or Cheddar, or any eating cheese (not Parmesan)
1 1/2 cups of ham cut into 2cm cubes
Method:
Preheat the oven to 180C and line muffin tins with papers
1. Stir together the flour, sugar, baking powder, baking soda, salt, and thyme in a medium bowl.
2. In a separate bowl combine the milk, egg, and melted butter.
3. Stir milk mixture into the flour mixture until barely combined. Fold in the ham and cheese. Divide the batter among muffin cups.
4. Bake for 15-20 minutes.
5. Allow to cool on a wire rack and enjoy warm! If you plan on freezing some, allow to cool completely and then freeze in a ziplock freezer bag as soon as possible.
Waffles Prima Deli Style by Angelin Goh
Ingredients/ Method
2 cups /256 g all-purpose flour (i use top flour)
2 tsp baking powder
1/2 tsp salt
4 eggs yolks
200ml coconut milk
4tbsp melted butter/oil
100ml milk
100ml pandan juice
optional green colouring
Mixed and whisk eggs n ingredients, add in sifted flour n remaining dry ingredients
4 egg white
70 grm sugar
beat egg white and sugar to stiff peak n leave and fold in egg batter
Preheat machine and enjoy waffles making...the whole house smell so nice :)
Note. If you prefer plain waffles with no fillings n ice cream, you may increase the sugar by 20~30g or more
Pizza Crust Recipe by Norazlina Shukor
Dough is kneaded and proof in Kenwood BM260.
Ingredients :
180ml water
15g caster sugar
20g butter
10g milk powder
1 tsp salt
350g bread flour
1 tsp yeast
Method:
1. Put all ingredients according to above sequence into the bread pan and select dough cycle (Cycle 7 in Kenwood BM 260)
2. This cycle takes 1.5 hours but only 1 hour is needed for pizza dough
3. When the timer shows 0:30 minutes left, remove the dough from the bread pan
4. Prepare 12" non-stick pizza pan
5. Roll dough into a bowl and flatten it on the pizza pan
6. Prick the prepared dough with a fork so that the dough does not puff during baking
7. Add on the toppings of your choice
8. Preheat oven to 200C and bake for about 15-20 mins
You may freeze the dough after u have flatten it on the pizza pan.
Personally I feel it tastes nicer if you bake it immediately. :)

Yields: 9" loaf pan / 10 servings
Ingredients
- 170 gr salted butter, softened
- 1 1/2 cups all purpose flour
- 1 1/3 cup caster sugar
- 1/4 tsp salt
- 2 eggs + 1 egg yolk
- 1/2 cup 7-Up / Sprite
- 4 halves peaches, either fresh or tinned
Directions
1. Preheat oven to 350 deg F / 160 deg C. Line a loaf pan with parchment paper. Wash peaches in cold running water until all the syrup has been cleaned off. Pat completely dry, and slice. Set aside.
2. Cream butter and sugar till it turns very light and fluffy.
3. Add in eggs, one at a time, scraping the sides of the bowl and ensuring that
the batter is mixed thoroughly. Don't be tempted to cut short the mixing time!
As this cake doesn't use baking powder or soda, it needs the extra 'air' from
the whipping in order for it to rise sufficiently. Slowly mix in the flour and
7-Up alternately, starting and ending with flour.
4. Spoon 1/3 of the batter into the prepared pan. Arrange sliced peaches
sparingly in a single layer on top of the batter. Too many slices will result in
a soggy cake, so you've been warned!
Cover with a layer of batter, more sliced peaches, and smooth the remaining batter on top.

Rock Buns by Stevia Chai Yuen Loh

Ingredients
100g flour
½ tsp baking powder
40g cold butter, cut into cubes...
40g sugar
25g raisin
10g sultana
1 tsp candied peel
1 egg, lightly beaten
Method
Preheat oven to 180º C
Sift flour and baking powder together into a mixing bowl
Add sugar and stir till well blended.
Rub in the butter with your fingers, until mixture resemble bread crumbs
Add the raisin, sultanas and candied peel, mix till evenly distributed
Drizzle the egg into the mixture and mix till mixture comes together.
Shape mixture into the size of a tennis ball and place onto a greased or lined with baking parchment.
Bake for 20 - 25 minutes or till golden brown.
Remove and cool on the wire rack.
*Note: I use diced mixed fruit that I have in my pantry or you can use mixed fruits too.
