Pizza Crust Recipe by Norazlina Shukor



Dough is kneaded and proof in Kenwood BM260.

Ingredients :
180ml water
15g caster sugar
20g butter
10g milk powder
1 tsp salt
350g bread flour
1 tsp yeast

Method:
1. Put all ingredients according to above sequence into the bread pan and select dough cycle (Cycle 7 in Kenwood BM 260)

2. This cycle takes 1.5 hours but only 1 hour is needed for pizza dough
3. When the timer shows 0:30 minutes left, remove the dough from the bread pan
4. Prepare 12" non-stick pizza pan
5. Roll dough into a bowl and flatten it on the pizza pan
6. Prick the prepared dough with a fork so that the dough does not puff during baking
7. Add on the toppings of your choice
8. Preheat oven to 200C and bake for about 15-20 mins
You may freeze the dough after u have flatten it on the pizza pan.
Personally I feel it tastes nicer if you bake it immediately. :)

Pita Pizza 3 Ways by Shar Kay

Ingredients

  • 1 cup shredded mozzarella & cheddar cheese mix (I like to buy mine from cold storage for only $2.99)
  • 3 pieces pita bread
  • 1 chicken breast, skinless & diced
  • 1/4 yellow onion, diced
  • 1/4 tomato, seeded and diced
  • 1 tbsp of diced green pepper
  • 1/2 a small carrot, finely shredded
  • 4 basil leaves, julienne 
  • 1/2 tsp lemongrass, finely chopped*
  • 1/2 juice of a lime*
  • 1 small clove of garlic, minced*
  • 1/2 tsp grated ginger*
  • 2 tsp tomato paste, divided*
  • 1/2 chili padi, finely chopped and seeded*
  • 1/2 tsp fish sauce*
  • Dash of white pepper*
  • 2 tsp BBQ sauce
  • 1 tsp sweet thai chili sauce
  • Salt and pepper

Low Carb Hi- Fibre Cauliflowe​r crust pizza by Grace Heng




















Ingredients


1 head cauliflower (buy organic from The Organic Grocer at Pasarbella!)
10 almonds (can be omitted)
1 teaspoon each of spices (any kind)- my favourites are basil, garlic powder, crushed red pepper, black pepper, oregano
I teaspoon olive oil
Tomato Sauce
(I highly recommend Alce Nero's Organic Tomato Sauce with Basil (pictured) because this brand doesn't add salt or sugar. If you look carefully at other brands' labels, the ingredient list can contain up to 8 ingredients in one bottle and is packed with salt and sugar!)
Mozzarella or Parmesan
Pizza toppings of choice.
Method:
1. Remove cauliflower stem and cut the florets
2. Wash and remove any moldy bits
3. Pulse through the food processor till it becomes small and grainy
4. Place cauliflower on a clean washcloth and wring all the excess water from it.
When cauliflower is dry, place in a large bowl
6. If using the almonds, pulse it in food processor till it becomes fine powder and put in bowl
7. Add spices, oil and egg
8. Mix well. I recommend using hands so you can feel for large cauliflower bits.
9. Press mixture into a circular pizza shape on a piece of parchment paper.
(Or square, or use cookie cutters to make fun pizza shapes for kids)
10. Place parchment in preheated oven for 10 min
11. Remove tray from oven and top with tomato sauce and cheese
(I made mine half with cheese and half without to see if there was any difference taste wise)
12. Send pizza back into the oven for another 5 min or till cheese melts
13. Top pizza with toppings of choice

Over here, I topped it with leftovers I found in the fridge like a small piece of salmon, portobello mushrooms, sundried tomatoes and lightly caramelized onions. Enjoy :)

Cheese Sausage & Mushroom Pizza by Cindy Koh


Ingredients

For dough 
250g Plain flour
1 heaped tsp active dry yeast (about 10g)
1/2 tsp sea salt
Approx 150ml warm water
2 tbsp Olive Oil

For topping
2 Fresh tomatoes
3 cheese sausages
4 Can button mushroom
1 tbsp canned tomato paste (I used Prego sauce)
1 tbsp Olive Oil
Paramesan Cheese
Mozzarella Cheese
Camembert Cheese
2 Slices of Cheddar Cheese

Note: Depend on your pan & thickness preference. The dough quantity is sufficient to make 2 pizzas for my case as we like it thick.

Method
1) Combine the flour, yeast and salt in a mixing bowl. Stir in warm water and the olive oil. Add more water as necessary to form a dough. When you have got a shaggy mess, that's on it's way to bring a dough. Leave the mess to the mixer, beat until smooth and bouncy, though expect this still be on the sticky side. The beating should be about 5mins. (I used KA mixer with bread dough hook).

2. Stick some flour on your hands, take the dough out of the mixer bowl, just give it a quick roll and form the dough into round shap.

3. Then, oil your palm, and give your dough a roll again. Just to give your dough a really thin layer of oil.

4. Once your dough is oiled, put the dough back to the mixer bowl, covered with cling film, let it rest for 1 hour till the dough doubled in size.

5. Preheat oven to 200 degrees C.

6. Knock the air out of the dough using well-oiled hand, knead a little, and press onto the baking pan.

7. All ingredients ready, the bread dough is also ready, and let's assemble the pizza:

(A) Line stripped cheddar cheese along the side of the pizza. Fold in the cheddar cheese and give it a press. I let the cheddar cheese hide inside the round corner of the dough.

(B) Use fork to poke some holes on the crust, apply a layer of olive oil on top, and put into the often for 12-15min, depend on the crust level you want.

(C) Once the crust is out of the oven, apply a layer of tomato paste on it.

(D) Add in tomatoes in sequence and the rest of the ingredients.

(E) Sprinkle the cheese generously on top and put the pizza back in oven and cook for a further 5-10 min or until the cheese has melted and the vase is crisp.

(F) Once it's out of oven, it is advisable to let the pizza rest 5min before start cutting them.

Note: Sometime I will skip (B) and do all the rest of steps then place pan in oven for 15-20 mins.

Brinjal Pizzas by Gwen Chow


Ingredients:

1 large Eggplant or brinjal
4 tsp olive oil
1/2 tsp salt
8 tsp black pepper
1/4 cup tomato paste
1/2 cup mozzerella Cheese
Pizza Toppings of your choice

Method:

1.  Slice eggplant/brinjal into 1cm slices
2.  Brush both sides with olive oil and season with salt and black pepper.
3.  Bake in 220 degrees oven for 6-8 mins until brown or almost tender, turning once.
4.  Spread tomato paste on the eggplant/brinjal slices.
5.  Add toppings of your choice and top with Mozzerella Cheese
6.  Bake in 220 degrees oven 3-5 mins till cheese melts.
