Mini Corn Dog Muffins by Gwen Chow


Ingredients:

1/2 cup melted butter
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 tsp baking soda
1 cup cornmeal
1 cup flour
1/2 tsp salt
8-10 hotdogs (cut into 3 pieces)

Method:

1.  Combine baking soda, cornmeal, flour and salt in a large bowl.
2.  Combine butter and sugar with whisk.
3.  Add eggs and whisk to combine.
4.  Add buttermilk and whisk well.
5.  Add dry ingredients into wet ingredients. Mix well.
6.  Drop 1 TBsp of batter into mini muffin tray.
7.  Place 1 hotdog into the middle.
8.  Bake 190 degrees 8-12 mins.
