Mee Jiang Kueh by Gwen Chow


260g plain flour
2 eggs
320ml water
60g sugar
1 tsp yeast
1 tsp bicarbonate soda
1.  Mix the above ingredients well and let it stand for at least 1 hr. (The longer it stands, the better)
2.  Lightly grease a non stick pan and pour a ladle of batter to cook.
3.  Remove from pan and spread red bean, peanuts or any prefered fillings.
4.  Fold pancake into half, slice and serve.
Makes about 6 round pancakes.
