Chicken in Chilli Tomato Sauce by Doris Yew

Chicken in Chilli Tomato Sauce





Ingredients Part A
2 Chicken Thighs (cut into pieces)
1 big onion (quartered)
2 tomatoes (quartered)
1/4 pineapple (optional)
Ingredient Part B (pound or grind)
6 red chillis (remove seeds for less spicy)
3 green chillis (remove seeds for less spicy)
4 shallots
2 candlenuts
2 cloves garlic
3 slices ginger
1 tsp belachan powder

Ingredient Part C
2 tbsp tomato sauce
1 tbsp sugar
1 cup water
Salt to taste

Method

1. Heat Up 3 tbsp oil, stir fry B until fragrant
2. Put in chicken and onions and coat well, then add in tomatoes and pineapples (if using)
3. Put in C, over and simmer for 5-8 minutes.
4. Remove, garnish with spring onions and chinese celery leaves and serve hot.
