Sambal Belachan by Meiricia Christina Ng

Sambal Belachan

10 chilli padi
3 shallot
2 garlic
1/2 tsp belachan powder
sugar/brown sugar

1. Blend chilli, shallot, garlic, add oil to bind the ingredients
2. Heat oil in wok add sambal paste stir fry until color become deeper red
3. If it's too dry add oil again, add belachan powder, salt, brown sugar
4. Stirring constantly until the oil separated from sambal
